Dietary needs and planning tips
Allergies and diets are taken seriously. Help us by following these steps:
- Confirm the venue is happy to have a catering vehicle
- Add a dietary question to your RSVP
- Put any allergies in writing for us
- Count children separately
For a taco bar, we lay the fillings, salsas and toppings out on a table, and guests build their own.
Quesadillas go down well with children, because they’re simple.
How our Mexican catering works in St John's
We bring our food truck or trailer to events in and around St John's: private gardens, venue grounds, courtyards and fields, as long as there’s safe access. It works well for anniversaries and engagements and weddings, day or evening, with burrito bowls, fresh salsas and guacamole and burritos.
A place like St John's may have a hall or a club with a car park nearby; any can work, given permission and level ground to park on. Your quote sets out what’s included: the menu, the service time and any extras you choose.
The menu, item by item
Burritos and burrito bowls
Burritos are filling and easy to eat on the move. Bowls suit guests who want to skip the tortilla.
Tacos
Warm tortillas with a choice of fillings, topped with salsa and fresh toppings. Fillings are agreed with you, such as carnitas, chicken tinga or spiced mushrooms.
Can I do a taco night myself?
A DIY taco night is possible for a crowd, but it’s more work than it looks. There are fillings to slow-cook, tortillas to keep warm and salsas to make. Read our guide to taco bars.
Some hosts like to do it themselves. The usual problems are cold tortillas, running out of a popular filling and a host stuck at the stove. If you’d rather be with your guests, we’ll do the serving.
How it works
It’s a relaxed, well-organised set-up. We agree arrival and serving times in advance, set up our food truck or trailer, and get on with serving. Around midsummer it stays light in St John's until about 9:20pm; by late September sunset is nearer 7:05pm, so summer evening service is normally in daylight. For winter events, when it is dark by about 3:55pm, plan lighting where guests queue and eat.
- Start by telling us about your event.
- You get a sample menu and a quote.
- We agree access, the serving spot, power and water.
- We arrive, set up and serve from the hatch.
- Once service ends, we clear away.
How to prepare
- Have level hardstanding or firm ground ready
- Let us know who to talk to on the day
- Confirm the venue allows outside caterers

Do you do margaritas?
Yes, we offer a Mexican drinks bar, with margaritas, Mexican beer, aguas frescas and soft drinks. Your venue or event may need the right licence for alcohol, so we will talk licensing through with you.
