It is a relaxed, well-organised set-up. We agree arrival and serving times in advance, set up our truck or trailer, and serve without fuss. December parties in Yelsted are dark from about 3:50pm, so plan lighting where guests queue and eat. In late June, it stays light until about 9:15pm.
