Mexican street food for Marley events

How our Mexican street food works in Marley

The menu is agreed with organisers, with fillings such as carnitas, chicken tinga or beef birria, plus a vegan option such as spiced mushrooms or black beans. For music and food festivals and sports clubs and race days, we’ll put together a menu of burrito bowls, burritos and vegan tacos.

At a fête or field event near Marley, we can bring hot food to a rural site. Ground conditions and access matter, so tell us about them. We will check the space, access and power with you before the day, so set-up goes smoothly.

Working with your venue

Venues often have their own rules about outside caterers: where vehicles can park, access times and the paperwork they need. Tell us what your venue needs and we’ll work to it.

Events in public spaces, like parks, generally need permission. We will provide the information the landowner or council asks for from us.

Planning the serving area

The route in matters as much as the spot itself. We look for:

  • A pitch with space around it, away from tents and structures
  • Pitch space for the vehicle and a queue
  • Vehicle access to the pitch for set-up and break-down

If you’re unsure, send a photo of the space and the way in, and we’ll say what we think before you book.

Choosing a Mexican caterer

Questions from Marley

Do you cater in the Kent Downs National Landscape?

We do, where the venue allows a catering vehicle. Lanes can be narrow and ground soft, so tell us how we’d get in.

What’s the nearest station to Marley for guests?

Guests can use Harrietsham station, about 0.6 miles west of Marley.

What do you serve?

We agree a sample menu with each client. Fillings could include slow-cooked pork carnitas, chicken tinga, beef birria and vegan options such as spiced mushrooms or black beans. See our menu for ideas.

Do you do a taco bar?

We can. We can set up a build-your-own taco bar, served from the truck or a serving table, with fillings, salsas, guacamole and toppings. Read our taco bar guide.

How spicy is the food?

It’s up to you: we can keep it mild and put the hotter salsas on the side.

Do you cover Marley?

Yes, we do. Marley is one of the places we cover. Tell us your date and we’ll check availability.

Do you give allergen information?

We plan allergen-aware menus, including for nut allergies, with allergen information for every dish. We plan carefully and keep options separate, though we can’t promise a dish is allergen-free. Guests with severe allergies should talk to us before the event.

How is the food prepared?

Food is cooked to order in our food truck or trailer, or served from a build-your-own taco bar. Slow-cooked fillings are prepared in advance and kept hot on site.

Diets, allergies and planning

Dietary needs are easy to plan for with a little notice. We suggest:

  • Provide seating near the food
  • Confirm power and water with traders
  • Plan for vegan and gluten-free visitors
  • Ask for allergen information at each stall

If crew or volunteer meals are booked, they’re served at the agreed times.

Bowls as a gluten-free choice.

How the day works

We get there well before you want to serve, set up the truck or trailer and get everything ready. Guests come up to order when service opens. Summer events in Marley have daylight until about 9:15pm at midsummer and about 7:00pm by late September, so evening trading normally finishes in daylight in high summer. For winter markets, dark by about 3:50pm, the pitch needs lighting.

  1. Organisers send us the event details, dates and pitch information.
  2. You get our stall menu, what we need at the pitch and the paperwork you request.
  3. We arrive at the agreed time and set up on our pitch.
  4. We serve from the hatch through the trading times you set.
  5. At the close, we clear our pitch.

Getting ready for the day

  • Let us know the timings for the day
  • Name one person we can ask on the day
  • Send us final numbers and dietary needs in good time

Why choose Mexican street food in Marley?

Some traders struggle with vegan and gluten-free visitors. Our menu includes vegan and gluten-free options. Cost depends on guest numbers, the menu and the length of service, plus any add-ons and the location. We quote for each event individually.

What you get with us

  • Food and drinks from one caterer, if you want both
  • A menu built around your guests
  • We cover Marley and the whole of Kent
  • A quote that sets out what’s included

Read our prices page or our guide to catering costs.

Can I do a taco night myself?

If you do it yourself, work out quantities first: our guide to how many tacos per person helps. Keep warmed tortillas covered, and label anything containing allergens.

Some hosts like to do it themselves. Common snags are cold tortillas, uneven quantities and the host missing the party. If you’d rather enjoy the party, let us serve.

  • Vegetarian, vegan, gluten-free and dairy-free options, with allergen information
