Planning the serving area

We’ll be honest if a space won’t work. What matters most:

  • Some distance from houses and neighbours
  • A flat, firm spot where the truck or trailer can stand
  • A place for the truck or trailer near where guests are eating

Not sure about your space? Send us a picture and we will tell you honestly before you book.

Should I do it myself?

Running your own drinks table is one option, but someone still has to mix, pour and keep an eye on it all evening. Our margarita bar guide has tips.

Doing it yourself saves money, but the host ends up in the kitchen. Booking a caterer means you can relax with everyone else.

How it works

We need a level, firm spot we can drive the truck or trailer onto, and we agree power and water arrangements before the day. A photo of the space helps. By late September, sunset in The Holt is around 7:05pm, which can put the evening food just after dusk. A late-May wedding keeps its light until roughly 8:55pm.

  1. We start by checking your date.
  2. You choose the fillings, sides and extras.
  3. We confirm the plan with your venue.
  4. Guests build their tacos at the taco bar or order at the hatch.
  5. After serving, we clear away.

How to prepare

  • Have a marquee or gazebo ready in case of rain
  • Share the running order, including any speeches
  • Tell us about narrow gates or low branches
