Mexican catering in Three Chimneys, from our food truck or trailer

A build-your-own taco bar is one of the most sociable ways to feed a crowd. Guests fill their own tortillas from the fillings, salsas and toppings, so nobody ends up with something they do not want. For office lunches and team days and festivals, fairs and markets, we can serve burritos, loaded nachos and tacos.

Somewhere like Three Chimneys, a field or garden is often the setting. Mention gates and soft ground when you contact us. We prepare everything fresh for your event and serve it straight from our food truck or trailer.

The process

The truck or trailer needs a level, firm spot with access to drive in, and we agree power and water arrangements before the day. Send us a picture of the space if you are unsure. Winter evenings in Three Chimneys close in by about 3:50pm, so a well-lit spot for the queue makes a big difference. In late June, by contrast, daylight lasts until about 9:15pm.

  1. Share the date, the venue and how many are coming.
  2. Together we plan a menu around your guests’ diets.
  3. We check the route in and where the truck or trailer will stand.
  4. Guests order at the hatch or build their own at the taco bar.
  5. After the last serving, we clear our area.

DIY taco night versus a caterer

Doing it yourself? Start with the quantities: our guide to how many tacos per person helps. Keep warmed tortillas covered, and label anything containing allergens.

You can set up your own drinks table, but someone has to serve all evening. Our margarita bar guide has tips.

What’s on the menu

Burritos and burrito bowls

Rice, beans, a filling and toppings rolled in a large tortilla, or the same served in a bowl.
