Fillings are slow-cooked in advance, then finished and kept hot on site. The tortillas are warmed on site, and the salsas and guacamole are made fresh.
What happens if it rains?
The truck or trailer can serve in the rain, but your guests will want somewhere covered, like a marquee or gazebo.
