How our Mexican catering works in Cranbourne

A build-your-own taco bar is one of the most sociable ways to feed a crowd. Guests fill their own tortillas from the fillings, salsas and toppings, so nobody ends up with something they don’t want. For christenings and family parties and weddings and evening receptions, we will put together a menu of burrito bowls, a build-your-own taco bar and quesadillas and more.

For a rural spot like Cranbourne, fields and drives need a little planning: gate widths, soft ground and the distance from the road all matter. Power and water may be limited, so we confirm the arrangements with you. We arrive ready to serve, and clear our own area when service is finished.

How the day works

When we arrive, we park the truck or trailer in the agreed spot and set up. We are ready to serve at the agreed time, planned around your event. A December event in Cranbourne will be in the dark from about 3:55pm, so choose a spot where guests can see what they’re ordering. In late June, by contrast, daylight lasts until about 9:25pm.

  1. Contact us with the basics: when, where and how many.
  2. We come back with menu ideas and a quote.
  3. Closer to the day, we confirm timings and arrangements.
  4. We serve hot food from our food truck or trailer at the agreed time.
  5. When you are done, we pack away.

How to prepare

  • Have a marquee or gazebo ready in case of rain
  • Share the running order, including any speeches
  • Measure any gates or arches on the way in

DIY taco night or a caterer?

For a small group, a taco night at home can work well. For larger numbers, mixed diets or a wedding, a caterer takes the pressure off, and handles allergen information for you.

Running your own drinks table is one option, but someone still has to mix, pour and keep an eye on it all evening. Our margarita bar guide has tips.

Catering for every guest

Mixed diets are straightforward to plan for, because options can be kept separate. A few tips:

  • Send allergy details to us in writing
  • Ask guests about diets and allergies with your invitations
  • Think about cover for guests in wet weather
  • Ensure the menu has a vegan option

When service ends, we pack down and clear our area quietly.

Margaritas, Mexican beer and aguas frescas can be added from our drinks bar.

Planners, venues and businesses

If you are booking for a business, tell us what your finance team needs, and we’ll talk you through the process. We can work with your facilities team on access and timings.

If you are planning an event on someone’s behalf, whether you’re a planner, an office manager or an event organiser, we’re happy to deal with you and the venue directly. It saves passing messages back and forth.

Cranbourne: your questions answered

Which station should guests use for Cranbourne?

The closest is Ascot station, roughly 3 miles away.

Do you come out to small places like Cranbourne?

Yes. Villages and hamlets are part of our area, and the main thing is access: tell us about the lane, the gate and the ground.

Do you have options for kids?

Yes, children are welcome. Let us know numbers and ages, and we’ll plan the menu with them in mind.

Can you set up at our venue?

Level, firm ground, access for the truck or trailer and the venue’s agreement. Power and water are confirmed with each booking.

Can we add a bar?

Yes. The drinks bar offers margaritas, Mexican beer, aguas frescas and alcohol-free drinks. We’ll talk licensing through with you.

Do you take everything away?

We pack down and tidy our own area after service. For anything beyond that, such as guests’ tables, ask us.

What if it rains?

We can still serve in the rain. Have somewhere covered ready for guests.

Do you do parties at home?

Yes, as long as there’s access and a level, firm spot. Send us a photo of the access and the space, and we will tell you honestly whether it works.
