Wedding Mexican catering for Fairlight events

Wedding Mexican catering in Fairlight, served fresh

We time service around your day: whether that’s straight after the photos or later in the evening. Timings are agreed with your venue in advance. Popular choices include fresh guacamole and salsas, quesadillas and loaded nachos, which works well for sharing-style wedding meals and late-evening wedding food.

Near Fairlight, weddings are often in fields, barns or gardens. That is where a food truck comes into its own: no venue kitchen needed, just level, firm ground and a way in. Let us know about access, ground, power and water. We cater for vegetarian, vegan, gluten-free and dairy-free guests, with allergen information for everything we serve.

Working with your venue

For repeat events, such as annual staff parties or seasonal fairs, let us know your dates early, so we can check the date.

If your event is in a public space, such as a park, check what permission you need first. We’ll provide the information the landowner or council asks for from us.

Dietary needs and planning tips

Mixed diets are straightforward to plan for, because guests can choose what suits them. A few tips:

  • Add a dietary question to your RSVP cards
  • Include suppliers who need feeding
  • Send us the running order and speech times
  • Connect us with your coordinator

Evening food is served at the agreed time, often after the first dance.

Ask us about plates, cutlery and serving staff, and we’ll set it out in the quote.

Questions from Fairlight

How far is Fairlight from London?

Roughly 54 miles from the centre of London.

Can you cater a reception after a service at The Parish Church of St Andrew?

Yes, at a nearby garden, marquee or hall with access for the truck or trailer. We’d serve at the reception venue rather than at the church itself. Send us the reception address.

Which areas do you serve?

London and the South East: Greater London, Kent and Medway, Surrey, East Sussex, West Sussex, Hampshire, the Isle of Wight, Berkshire, Buckinghamshire and Oxfordshire.

When should we book?

As soon as you have a date. Popular dates go first, so get in touch early.

Do you bring plates and cutlery?

We confirm that with your quote. Tell us whether your venue has crockery or you’d prefer disposables and we will talk it through.

When do you arrive?

We get there well before service to set up. Serving times are agreed with you in advance.

Do you do margaritas?

Yes, we do. The drinks bar can be added to food or booked on its own, with alcohol-free options such as aguas frescas. We’ll check the licensing for alcohol with you.

What happens if it rains?

The truck or trailer can serve in the rain, but guests need somewhere covered to eat and drink, like a marquee or gazebo.

Planning the serving area

Every venue is different, so we ask about the space before we confirm. In general, we need:

  • Details of power and water on site, agreed when you book
  • Agreement from the venue to bring a food truck or trailer on site
  • Space for guests to queue

If in doubt, send us a picture of the spot and the access, and we’ll advise.

Popular choices

  • Evening tacos
  • Margarita bar
  • Guacamole and salsas
  • Nachos to share
  • Burritos and bowls
  • Taco bar wedding breakfast

The process

The truck or trailer tends to draw a crowd, so we plan a spot with space for people to queue. Rain doesn’t normally stop us serving, though guests will want somewhere covered to stand or sit. Golden-hour photos in Fairlight at midsummer come around 9:15pm, so we can time the evening food around your photos. In late May, sunset is about 8:45pm, and in late September about 7:00pm.

  1. We start by checking your date.
  2. You pick the menu with us.
  3. We confirm access and the serving spot with your coordinator.
  4. Guests build their tacos at the taco bar or order at the hatch.
  5. After serving, we clear away.

Planning help

Who books wedding Mexican catering in Fairlight?

Mixed diets are easy, which helps when the guest list is long.

Big or small, a truck or trailer works well. Common bookings include:

  • Weddings with lots of dietary needs
  • Late-evening wedding food
  • Blessings and vow renewals
  • Farm and barn venues

Group shots in Speckled Wood could be lovely, though some parks ask for notice or a permit, so look into it.

Questions to ask before you book

  • Any travel, parking or access charges
  • What the caterer needs from your venue
  • Payment terms and deposit
  • When final numbers are due

Our caterer checklist

Prices and what affects them

Each event is quoted on its own, based on a few main things:

  • The menu you choose
  • Whether you add a drinks bar or food
  • The number of people
  • The length of service

Access and travel can make a difference to the cost, so tell us about the venue when you ask for a quote. The full price is confirmed in your quote.

What to tell us

We can quote more accurately with a few details. Here’s what’s useful:

  • Roughly how many adults and children
  • What you’d like on the menu
  • Gate widths, slopes and the ground
  • The venue or postcode

Why choose wedding Mexican catering in Fairlight?

A buffet can leave food sitting out. Our food is served hot from the truck or trailer when guests are ready. Got a budget? Let us know, and we will suggest a menu to match. Even a simple menu can feel generous.

Why book with us

  • Everything served fresh from the hatch
  • A quote that sets out what’s included
  • We cover Fairlight and the whole of East Sussex
  • Allergen information for everything we serve

See how we price and the cost guide.

DIY taco night or a caterer?

You can host your own taco night for a crowd, but it takes planning. Fillings need slow cooking, tortillas need warming as you go, and salsas need making. Read our guide to taco bars.

Doing it yourself? Start with the quantities: see how many tacos per person. Keep tortillas warm in a covered basket, and label dishes for guests with allergies.
