How the day works

Once service is over, we pack down and clear our own area. Set-up and pack-down times are agreed with you and the venue. In Fareham Common, midsummer sunset is about 9:20pm, and by late September it is nearer 7:10pm, which means evening food is generally served in daylight in June and July. For autumn and winter weddings, when it’s dark by about 4:00pm in December, plan lighting around the truck or trailer.

  1. We start by checking your date.
  2. You choose the fillings, sides and extras.
  3. We confirm the plan with your venue.
  4. Food is served from the taco bar or the hatch.
  5. After serving, we clear away.

Preparing for the day

  • Check the venue is happy to have a truck or trailer on site
  • Share the running order, including any speeches
  • Confirm numbers and diets before the day

Can I do a taco night myself?

A DIY taco night is possible for a crowd, but it’s more work than it looks. There are fillings to slow-cook, tortillas to keep warm and salsas to make. Our taco bar guide explains how.

Plenty of people try a DIY taco night at home. The usual problems are cold tortillas, running out of a popular filling and a host stuck at the stove. If you’d rather enjoy the party, let us serve.

Catering for every guest

Dietary needs are easy to plan for with a little notice. Our advice:

  • Plan a covered area for eating in case of rain
  • Ask about your date as soon as you have one
  • Introduce us to your venue coordinator
  • Tell us about guests with coeliac disease or severe allergies

We have allergen details for every dish, and every dish is labelled at the serving point.

We can feed your photographer and band too if you add them to the final count.

Wedding planners and venue coordinators are welcome to contact us directly, and we will keep you updated on timings and set-up.

For repeat events, such as annual staff parties or seasonal fairs, let us know your dates early, so we can check the date.
