Diets, allergies and planning

Most events have a mix of diets. To plan for them:

  • Ask guests with severe allergies to talk to us before the event
  • Collect dietary needs when guests reply
  • Ask the venue whether food trucks are allowed
  • Put any allergies in writing for us

For a taco bar, we lay the fillings, salsas and toppings out on a table, and guests build their own while we keep it topped up.

Extra salsas and toppings can widen the choice.

Mexican catering in Bix, from our truck or trailer

Fillings are slow-cooked in advance and kept hot on site, and the salsas and guacamole are freshly made. Tortillas are warmed as we serve. It suits fundraisers and school events and engagement celebrations, with quesadillas, fresh salsas and guacamole and burrito bowls.

In a small place like Bix, events are typically in a garden, a field or a nearby hall. Country lanes, long drives and gates are fine if we know about them, and firm ground matters, especially after rain. Access, space and power are agreed with you beforehand, so set-up goes smoothly.

Bix questions

Will you travel to a small place like Bix?

Yes, we cater in villages and hamlets as well as towns. Tell us about lanes, gates, ground and parking.

Could you serve our guests after a service at Church of St James?

Yes, at a nearby garden, marquee or hall with access for the truck or trailer. Service would be at the reception venue, not the church. Send us the reception address.

Can you come to a private house?

It depends on access. A drive or a spot nearby may work, with permission, if the garden itself is out of reach. Send us a picture and we will talk it through.

How long do you serve for?

It depends on your event. We agree arrival, service and pack-down times with you so everything fits your schedule.

Do you cater for vegetarian guests?

Yes. Vegetarian and vegan fillings, such as spiced mushrooms or black beans, can be part of the menu.

How many guests can you cater for?

Truck and trailer service typically suits around 50 to 400 guests. Bigger festivals and smaller parties are looked at case by case.

Do you come to Bix?

We do. Bix is one of the places we cover. Tell us your date and we will check availability.

Is the food made fresh?

We slow-cook fillings ahead, then finish them and keep them hot at your event. The tortillas are warmed on site, and the salsas and guacamole are made fresh.

The process

Once service is over, we pack up and leave our area tidy. Set-up and pack-down times are agreed with you and the venue. Daylight in Bix runs to about 8:55pm in late May and 7:05pm in late September. Let us know if service will run after dark, and we will talk about lighting.

  1. You tell us the date, the venue, rough guest numbers and any dietary needs.
  2. We put together a menu around your guests and quote for it.
  3. Before the day, we agree access, the serving spot, power and water.
  4. On the day, we set up and serve from the truck or trailer, or from a taco-bar station.
  5. After service, we clear away and leave the spot tidy.

Preparing for the day

  • Name one person we can ask on the day
  • Measure any gates or arches on the way in
  • Tell us what power and water the site has

For planners, venues and organisers

If your event is in a public space, such as a park, check what permission you need first. We can send what the landowner or council needs from us.

DIY taco night versus a caterer

A DIY taco night works well for a small group. For larger numbers, mixed diets or a wedding, a caterer takes the pressure off, and handles allergen information for you.
