DIY taco night versus a caterer

A DIY taco night is possible for a crowd, but it is more work than it looks. Fillings need slow cooking, tortillas need warming as you go, and salsas need making. Our taco bar guide explains how.

Running your own drinks table is one option, but someone has to serve all evening. See our margarita bar guide.

How the day works

Service is quick and friendly: we serve from the hatch or a serving station, so a crowd is looked after quickly. Afterwards we clear our area. A summer drinks reception in Broad Oak has daylight until about 9:15pm at midsummer, ideal for drinks outdoors. In late September it’s dark around 7:00pm, and in December by about 3:55pm, so evening bars need lighting.

  1. We check availability.
  2. We suggest margaritas, beer, aguas frescas and alcohol-free choices.
  3. We confirm power, water and the bar spot.
  4. The bar opens at the agreed time.
  5. When the bar shuts, we clear away.
