For event organisers
Running a festival, market, fair or council event? Here’s what we need on a pitch, the paperwork events often ask for, and how to invite us to trade.

Mexican street food for your event
We trade at festivals, food markets, fairs, shows and council events across London and the South East. We serve tacos, burritos, burrito bowls, loaded nachos and quesadillas from our truck or trailer. It’s food visitors can eat on the move, served quickly at the hatch.
This page is for organisers. It covers what we need on a pitch, the paperwork events often ask for, and how to invite us to trade.
What we need on a pitch
- Level, firm ground or hardstanding. Soft grass after rain can stop a vehicle getting on site. Tell us the ground type.
- Access. A route wide and high enough for the truck or trailer, with build and break times when vehicles can move.
- Pitch size. Ask us for the space we need, including room for a queue that won’t block walkways.
- Power. Tell us what’s supplied and how. We confirm power with each event.
- Water and waste. Where water is available, and how waste and grey water are handled.
- Trader parking. Where support vehicles go, if anything can stay behind the pitch.
Paperwork your event may ask for
Every event has its own trader requirements. Councils and larger festivals often ask for some or all of these:
- Food business registration and food hygiene rating details
- Public liability insurance certificate
- Gas safety certificate for the vehicle
- Electrical safety (PAT) test certificates
- Risk assessment and fire risk assessment
- Allergen information for every dish on the menu
- Menu, price list and photos of the truck or trailer
Tell us what your event needs, and we’ll confirm what we can send. Our guide to food hygiene ratings for caterers explains how ratings work.
Our menu for public trading
At public events we keep the menu short so the queue moves. A typical public menu has tacos with two or three fillings, a burrito or bowl, and loaded nachos. There are vegetarian and vegan options, with corn tortillas and bowls for gluten-free visitors and allergen information for every dish. See our sample menu.
If you need to avoid duplication with other traders, or want a set price point, tell us and we’ll talk it through.

More for organisers
Our guide to festival catering for organisers covers choosing traders, layouts and queues. Our festival and street-food catering page explains how we trade at public events.

- Visitors. Expected numbers per day, and how many other food traders.
- The pitch. Size, ground type, power, water and access times.
- Terms. Pitch fee, a share of takings, or another arrangement.

We’ll reply to let you know if we can trade and what we can send.
