Step by step
Serving is quick: guests are served at the hatch or a serving station, so a crowd is looked after quickly. When service ends, we pack down. By late September, it is dark in Baffins at around 7:10pm, so evening service from the truck may run past dusk. A late-May event keeps its light until roughly 8:55pm.
