We get there well before you want to serve, set up the truck or trailer and get everything ready. When service opens, guests come up to the hatch or serving table. At midsummer, it stays light in Little Portugal until about 9:20pm, and by late September sunset is about 7:05pm. In December it’s dark by about 3:55pm, so the queue by the hatch needs lighting.
