Our caterer checklist

Catering for every guest

Most events have a mix of diets. To cater well for them:

  • Add a dietary question to your RSVP
  • Tell us what other food is being served
  • Guests with serious allergies should speak to us in advance
  • Let us know if a guest is coeliac

Guests order at the hatch and we serve them there and then, so it’s hot when it reaches them.

Loaded nachos make a good sharing starter.

Running your own drinks table is one option, but someone still has to mix, pour and keep an eye on it all evening. Our margarita bar guide has tips.

Where the truck can go in Great Burgh

Many gardens, fields and venues can take a truck or trailer, but a few things matter:

  • A spot away from buildings, windows and neighbours
  • A flat, firm spot where the truck or trailer can stand
  • A route in that’s wide and tall enough, with soft ground checked in advance

If you’re unsure, send a photo of the space and the way in, and we’ll say what we think.

How it works

Your timings come first. If speeches run late or the photos take longer, tell us and we will adjust the start of service where we can. Around midsummer it stays light in Great Burgh until about 9:20pm; by late September sunset is nearer 7:05pm, so summer evening service is normally in daylight. For winter events, when it’s dark by about 3:55pm, plan lighting where guests queue and eat.

  1. First, send us a few details about your event.
  2. You get a sample menu and a quote.
  3. We agree access, the serving spot, power and water.
  4. On the day we park up, set up and serve hot food to order.
  5. We pack down after service and leave the area tidy.

Before we arrive

  • Share the running order, including any speeches
  • Measure any gates or arches on the way in
  • Send us final numbers and dietary needs in good time

Your questions about Mexican catering in Great Burgh

Do you cater in the Surrey Hills National Landscape?

Yes. Some venues there have rules about vehicles, ground and catering, so check with yours. Tell us about narrow lanes and soft ground.

Which station is closest to Great Burgh?

Tattenham Corner station, in Great Burgh itself.

How is the food prepared?

Food is cooked to order in our truck or trailer, or served from a build-your-own taco bar. Slow-cooked fillings are prepared in advance and kept hot on site.

How long do you serve for?

That depends on your event and menu. We agree arrival, service and pack-down times with you so everything fits your schedule.

Is the food very hot?

We can keep it mild, with hotter salsas on the side for anyone who wants more heat.

Do you cover Great Burgh?

Yes. We cover London and the South East, and Great Burgh is within our area and the rest of Surrey. To check your date, send a quick message through our quote form.

How many guests can you cater for?

It depends on the event. As a guide, it is around 50 to 400 guests; tell us your numbers and we will plan around them.

Can we have a build-your-own taco bar?

Yes. A build-your-own taco bar can be served from the truck or a serving station, with fillings, salsas, guacamole and toppings.

Is Mexican catering right for your event?

A plated meal needs a kitchen and a larger team. A food truck or trailer is its own kitchen, so we need a suitable spot, access and the venue’s permission, with power and water confirmed when you book. A food truck can be a practical alternative to plated catering, as there is no kitchen to hire. Contact us for a quote to compare.
