Serving is quick: guests are served at the hatch or a serving station, so even a long queue moves. When service ends, we pack down. In December, the light goes in Three Oaks at about 3:55pm, so an outdoor bar needs lighting from the start. Midsummer is the opposite, with daylight until about 9:15pm.
