Guests take a plate and fill their tortillas from the dishes on the bar. We run the bar from set-up to pack-down.

The process
On the day, we park the truck or trailer in the agreed spot and set up. We are ready to serve at the agreed time, so everything runs to your schedule. Winter evenings in Royal Docks close in by about 3:55pm, so set the station up where the lighting is good. In late June, the light holds until around 9:20pm.
