How our taco bar hire works in Waterhall

Near Waterhall, a taco bar next to the truck in a field or garden works well. Let us know about the gate, the ground and the route in, and we confirm power and water arrangements before the day. Guests are served from our food truck or trailer, or from a serving table nearby, and we plan the service around your numbers.

Dietary needs and planning tips
Allergies and diets are taken seriously. Here’s how you can help:
- Tell us how many children are coming
- Put guests with serious allergies in touch with us early
- Collect dietary needs with your replies
- Send us allergy details in writing
We get there early enough to unload, lay out the table and heat everything through.
Nachos to share can keep guests going before the bar opens.

Waterhall questions
Could you serve in Withdean Park?
It depends on the park’s owner, who would need to agree to a catering vehicle on site. Ask them first; if they say yes, we will send what they need from us.
Can you bring a truck or trailer to venues in the South Downs National Park?
Yes. Some venues there have rules about vehicles, ground and catering, so check with yours. Tell us about narrow lanes and soft ground.
What access do you need?
Level, firm ground or hardstanding for the truck or trailer, and a route in it can fit through, plus the venue’s permission. We confirm power and water with you for each booking.
Do you take everything away?
We pack down and leave our area tidy. Let us know the venue’s rules on waste and we’ll talk it through.
How is the food prepared?
We cook to order in our food truck or trailer kitchen, or serve from a taco bar. Fillings are slow-cooked beforehand and finished on site.
What do you serve?
Mexican street food: tacos, taco bars, burritos, bowls, nachos and quesadillas, plus salsas, guacamole and toppings. We also run a Mexican drinks bar.
What should the venue provide?
A level spot for the serving table, room to queue and somewhere close to unload our vehicle. We confirm power and water when you book.
Can you serve in the rain?
The truck or trailer can serve in the rain, but guests need somewhere covered to eat and drink, like a marquee or gazebo.
Before you choose a spot
The route in matters as much as the spot itself. We need:
- Details of power and water near the bar
- A short, clear path for carrying the bar in
- A clear area in front of the station
Not sure about your space? Send us a picture and we will tell you honestly before booking.
Menu ideas
- Salsas and guacamole
- Tortilla chips
- Two to four fillings
- Vegan fillings
- Corn and flour tortillas
- Pickled onions and toppings
What happens on the day
The truck or trailer tends to draw a crowd, so we’ll help you choose a spot with room for a queue. Rain does not usually stop us serving, but guests will need somewhere covered. Around midsummer it stays light in Waterhall until about 9:20pm; by late September sunset is nearer 7:05pm, so a summer taco bar outside normally runs in daylight. For winter events, dark by about 3:55pm, plan good lighting over the station.
- Send us the date, venue and numbers.
- We plan the fillings, salsas and toppings with you.
- We confirm the table spot and where we will unload.
- On the day, guests help themselves while we keep the bar stocked.
- When everyone has eaten, we pack up.
How to prepare
- Share the running order, including any speeches
- Send us final numbers and dietary needs in good time
- Give us a contact for the day
